This healthy dessert "pizza" is a great way to indulge a craving for fresh berries. A whole wheat tortilla gets a sprinkle of cinnamon sugar, a dollop of apricot-ricotta spread and a handful of berries for a delicious blend of flavors. Add fresh mint leaves and serve warm as dessert, or even breakfast!
Apricot-Berry Dessert Pizza (serves 4)
4 whole-wheat flour tortillas
4 tsp margarine, melted
4 tsp granular sugar substitute (or white sugar)
1/2 tsp ground cinnamon
1 1/2 cups part-skim ricotta cheese
9 tsp apricot jam, divided
1 tsp grated lemon zest
1/2 tsp ground cardamom
4 cups raspberries or blueberries or a mixture
Fresh mint leaves, for garnish (optional)
Heat the oven to 400 degrees F. Place the tortillas on 2 baking sheets. Brush with the melted margarine and sprinkle evenly with the cinnamon mixture. Bake for 7 - 10 minutes, until crisp. Cool briefly.
Meanwhile, in a medium bowl, stir together the ricotta, 4 teaspoons of the apricot jam, the lemon zest, and cardamom.
Divide the ricotta mixture among the 4 tortillas, spreading it almost to the edges. Scatter the berries over the pizzas.
Heat the remaining apricot jam in the microwave on high for 20 seconds. Brush the berries with the melted jam. Garnish with mint leaves and serve warm.
