Here's an easy sandwich that is as tasty at lunch as it is at breakfast. The classic combination of salmon, cream cheese and chives is sandwiched between thin slices of grain bread and grilled to perfection. Serve with a small salad or soup, depending upon the weather. Squeeze a lemon slice over your sandwich before eating for extra zing. Green tea and lemon-yogurt coated pretzels round out today's menu.
Grilled Smoked Salmon Sandwiches with Cream Cheese and Chives (serves 4)
8 slices thin-sliced whole grain bread
2 ounces reduced-fat cream cheese
6 ounces thinly sliced smoked salmon
2 Tbsp chopped chives
Freshly ground pepper (use Trader Joe's Flower Pepper if available)
4 tsp margarine
Lay bread on work surface; spread each slice with 1 Tbsp cream cheese. Divide smoked salmon among 4 of the slices. Sprinkle salmon with chives and pepper. Top with remaining bread slices to make 4 sandwiches.
In a large non-stick skillet, heat 2 Tbsp of margarine over medium heat. Add 2 sandwiches and cook until golden brown, about 2 minutes per side. Repeat with the remaining margarine and sandwiches. Cut sandwiches and serve warm.

Trader Joe's pepper grinder includes calendula, lavender, rose and cornflower petals. It tastes a little like fresh pepper mixed with Herbs de Provence.
