A tasty grilled sandwich, a magazine and flowers - that's how I treat myself to an oasis of calm in an otherwise busy day. Add a colorful placemat (mine's a tea towel) and a cup of herbal tea and you've got the recipe for a lovely solo lunch. Or invite a friend over to share this rave-worthy sandwich.
Turkey, artichoke hearts, provolone, red pepper and sun-dried tomatoes melt together in this yummy stacked sandwich. Grill in a panini press or skillet - either way, its bellissimo!
Turkey Antipasto Panini (serves 2)
1 Tbsp reduced-fat mayonnaise
4 (0.9 oz) slices crusty Chicago-style Italian bread
4 oz. shaved lower-sodium deli turkey
1/2 (6 oz) jar quartered marinated artichoke hearts, drained and coarsely chopped
1/4 cup moist sun-dried tomato halves (put dried tomatoes in a cup of hot water for 2 minutes to reconstitute, then slice into ribbons)
1/4 cup sliced bottled roasted bell peppers
6 basil leaves
2 (1oz) slices reduced-fat Provolone cheese
Cooking spray
Granny Smith apple, sliced (optional)
Preheat panini grill or skillet.
Spread mayonnaise evenly over each bread slice. Top two bread slices evenly with turkey, artichokes, tomato, bell pepper, basil leaves, and cheese. Top with remaining bread slices. Coat both sides of sandwich with cooking spray.
Place sandwiches on panini grill. Grill 3-4 minutes or until bread is browned and cheese melts. If using a skillet, lightly spray skillet with cooking spray. Grill sandwiches in skillet for 2 minutes per side or until golden and cheese melts.
Cut panini in half before serving, if desired. Slices of green apple make a sweet, crunchy side dish.

You're making my stomach growl again! I love popping over and having virtual lunch with you (even if it's technically still breakfast time... I'm ready for lunch!). Flowers, yummy food and a magazine sound pretty perfect to me!
Oh, and I love your colorized photos from your last post! I'm afraid of photoshop, but my husband (who teaches computer software and is a photoshop whiz) keeps trying to convince me to learn it. You make it look like a lot of fun!
