I've been experimenting with a new routine in the mornings. I get up a little earlier in order to write affirmations that set the tone for my day. Affirmations are powerful mood adjusters and their positive energy really gets me going, especially in winter.
Here's another way to get a boost of positive energy: drink a mango lassi! Made with fresh mango and yogurt, this sunny drink will make your tastebuds smile. This recipe calls for sugar substitute, but a pinch of cardamom gives it authentic flavor.
Mango Lassi (makes four 3/4 cup servings)
1 medium mango, peeled and roughly chopped
1.5 cups low-fat or non-fat plain yogurt (I used Greek yogurt)
1/2 cup chilled water
1 Tbsp granular sugar substitute
Pinch of ground cardamom (optional)
In a blender, combine mango, yogurt, water, sugar substitute, and cardamom if using. Puree until smooth. Fill four 8-oz glasses with ice cubes. Pour mango lassi over ice and serve.
